Chocolate Chip Coconut Almond Cookies

Chocolate Chip Coconut Almond Cookies by Glenn Moehlin

Recipe: Yields 48ea. using a #30 scoop

8 oz. butter (softened)
3/4 cup brown sugar (packed)
3/4 cup granulated sugar
2 eggs
2 cups flour
1 tsp. salt
1 tsp. baking soda
1 tsp. vanilla
1 tsp. coconut extract
2 tsp. almond extract
12 oz. chocolate chips
8 oz. flaked coconut
8 oz. sliced almonds
 
  In a mixing bowl cream the butter, sugar and brown sugar until fluffy.
Gradually add in the eggs, vanilla, coconut and almond extract. Mix until blended.
Sift flour, baking soda and salt together. Add to the creamed butter and
sugar, mix together with coconut, almonds, and chocolate chips.
Scoop onto paper lined sheet pan or non-stick cookie sheet.

 Bake for 18-20 minutes at 350 degrees or until golden brown.
 
    * slightly under cook for a more chewy cookie.

Whole Wheat Oatmeal Cranberry Chocolate Chip Walnut Cookies

Recipe:

2 c. whole wheat flour
2 1/2 c. rolled oats
2 tsp. baking powder
1 tsp. baking soda
1 tsp. seasalt

3/4 c. brown sugar
1/2 c. raw cane sugar
1/2 c. all natural butter
4 ea. egg whites
1/2 c. applesauce
1 Tbls. vanilla
_______________________

1 c. white chocolate chips
1 c. dark chocolate chips
1 c. dried cranberries
1 c. chopped walnuts

Blend all dry ingredients together and set aside.
Cream butter, br.sugar and raw sugar till creamy,
scrape bowl and slowly add egg whites, applesauce
and vanilla while mixing on med. speed. Scrape bowl
again, then add dry ingredients, mix well then add,
choc, chips, cranberries and walnuts. Mix well,
scoop onto cookie sheet and bake 20 minutes at
350 degrees.

1 tsp. salt
1 tsp. baking soda
1 tsp. vanilla
2 c. chocolate chips
2 c. macadamia nuts (chopped)

 
 
 

 In a mixing bowl cream the butter, sugar and brown sugar
until fluffy. Gradually add in the eggs, vanilla. Mix until
blended. Sift flour, cocoa powder, baking soda and salt
together. add to the creamed butter and sugar, mix together
with macadamia nuts and chocolate chips.

 Scoop onto paper lined sheet pan or non-stick cookie sheet.

 Bake for 20 minutes at 325 degrees.

Almond Poppyseed Cookies

Recipe:

2 cups butter
2 cups sugar
1ea. egg
2 tsp. almond extract
2 cups sliced almonds
1/2 cup poppyseeds
4 cups flour
2 tsp. salt

Cream butter and sugar, add 1 egg, almond extract
and mix in. Add almonds, poppyseeds, flour and salt,
then mix well. Scoop onto cookie sheets and bake
325 degrees for about 20 minutes. Brush with almond
glaze as soon as they come out of the oven.

Almond glaze:

4 oz. powdered sugar
1 oz. hot water
1 tsp. almond extract

Tropical Shortbread Cookies

Tropical Shortbread Cookies w/ Coconut Milk Glaze by Glenn Moehlin

Recipe:


1 lb. butter
2 cups sugar
1 egg. 1 tsp. coconut extract
1 tsp. pineapple extract
1 tsp. salt
4 cups flour
1 1/2 cups pineapple (dried)
1 1/2 cups mango (dried).
1 cup coconut flakes
1 cup macadamia nuts

4 oz. powdered sugar
1 oz. coconut milk
1/4 tsp. coconut extract

 Cream butter and sugar until fluffy, scrape down sides of bowl
then add egg, extract and salt. Mix together, then add flour, dried fruit,
coconut and nuts. Mix until well incorperated. Scoop out on
parchment paper/sheet pan. Bake 350 degrees for about 18 to 20 minutes
or until golden brown around the edges. As soon as the cookie comes out
of the oven  gently brush with glaze.

 Glaze:

  Place powdered sugar in bowl, add coconut milk and extract. Whisk until smooth and cover until you are ready to use.

Serve fresh and enjoy.Cool

Chocolate Chip Peanut Butter Pretzel Cookies By Glenn Moehlin

Recipe:

Yield: A Bunch! Lolz.... 

2 cups granulated sugar
2 cups brown sugar
2 cups butter
4 eggs
2 cups peanut butter
2 tsp. vanilla
5 cups flour
2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
8  oz. mini twist pretzels
12 oz. chocolate chips
12 oz. white chocolate chips
12 oz. peanut butter chips

     Beat butter, brown sugar and granulated sugar until fluffy. Scrape sides
of bowl then gradually add the eggs, peanut butter and vanilla. Sift flour,
b.soda, b.powder and salt together, then add to bowl with pretzels, chocolate
chips, wh. choc. chips, and pb. chips. Mix well then scoop out on cookie pans.

     Bake 350 degrees 18 to 20 minutes or until golden brown. Enjoy! :)

Macadamia Nut Fudge Brownies

Macadamia Nut Fudge Brownies

Macadamia Nut Fudge Brownies by Glenn Moehlin

Recipe: makes 1/2 sheet pan

1 1/2 cups melted butter
3 cups sugar
6 eggs
1 Tbls. vanilla
1 cup cocoa powder
1 1/2 cups flour
1 tsp. salt
1 tsp. baking powder
1 cup chopped macadamia nuts

Melt butter, add sugar, eggs and vanilla. Mix well.
Sift flour, salt and baking powder together, then
add and mix till smooth. Add mac.nuts, mix and pour
into greased and floured pan, spread evenly.

Bake 350 degrees for about 20-25 minutes. Toothpick
should come out clean. Be careful not to over bake
or they will dry out.

I like to cut out with bisquit cutter and serve with
whipped cream and a strawberry on top, drizzle with
chocolate. Or bake in mini cupcake tin for bite size
yummy's. :)
